BANANA BREAD CUPCAKES!

BANANA BREAD RECIPE

Mix wet ingredients:

1/2 cup butter,  1 cup brown sugar,   3 eggs,  3 crushed ripe bananas, 1 tsp vanilla, 1 tsp. soda (dissolve in tsp. water)

Mix dry ingredients:
2 cups of flour (try one cup einkorn flour and one cup white flour),   1/2 tsp baking powder,  1/2 teaspoon salt, 1/2 tsp cinnamon, (optional 1/2 cup walnuts) 
Preheat oven to 350 degrees.
After mixing wet ingredients add the mixed dry ingredients about one third at a time until just gathered together. Place a spoonful of the batter in each cupcake container. Bake about 10 - 15 minutes until lightly brown. They are done when a toothpick comes out clean.

BANANA CUPCAKES!!

Choice - either ice, frost, or slice and add butter!

Easier to handle! Great for a quick breakfast!
